板面

Well,板面 is one of the Malaysian chinese favourite noodle... you can have soup or dried type. I personally prefer the dried type, but is more oily. Soup or dried must be best served with the special chili paste that for this type of noodle. Originally, it only have 2 types, soup or noodle. Eventually, people can 'invent' more types with herb soup, curry soup, Lo min soup.. as long as you can name it, they can make it :p So, i better note down the recipe before i forgot,.. i grap this recipe in FB group, well.. as usual, I will put in the photo once i had tried it myself :p

 材料:
A ( 面团 )
面粉 400克
薯粉 100克
盐 1/2茶匙
蛋 1个
清水 250豪升

 B
江鱼仔上汤 4公升
盐和胡椒粉调味

 C 树仔菜 适量

 D
肉碎 400克
冬菇 6块( 切丝 )
木耳 5块( 切丝 )
糖 1茶匙
蚝油 1汤匙
生抽 1汤匙
清水 1杯
盐和胡椒粉适量
为食粉勾芡

 E
炸江鱼仔 1碗
炸干葱 1碗

 F ( 搅烂 )
红辣椒 150克
指天椒 10条
巴拉煎 2汤匙
桔子汁 8粒或适量(榨汁) 

做法:
1.准备江鱼仔上汤:烧热4汤匙油,炒香200克江鱼仔,倒入4公升水煮沸,改用小火煮1小时。把江鱼仔取出,加入盐调味。 
2.烧热2汤匙油,放入肉碎和冬菇丝炒熟,加入其它材料D煮沸,拌入芡汁。 
3.将材料A拌匀,搓成幼滑面团。把汤煮沸,将皮料做成小块,放入汤内煮沸。加入树仔菜煮熟。
 4.取出加上材料D和E,沾材料F吃
