醃酸甜青瓜

This is a type of chinese salad, I used to eat this during my childhood, we serve this with rice ... My elder sister is an awesome cook, she add in some other ingredient as well.. finally i manage to find the recipe from christine's blog... just need to find some times to make this :)


材料:

  • 青瓜 2條 約 360克
  • 白醋 1杯
  • 白糖 1杯
  • 鹽 1茶匙

做法:

  1. 把青瓜洗淨,切去頭尾。用切出的頭尾磨青瓜,出了一些膠質,抹淨。直向切半,用匙羹把中間的籽刮去,切成約 3.5cmx0.5cm幼條。
  2. 放入一盤中,下 1茶匙鹽拌勻青瓜。醃約 10至 15分鐘。然後用水沖洗 2至3次。最後一次用冷開水洗淨。瀝乾水份,用廚房紙抹乾。放入雪櫃中,冷藏 20分鐘。
  3. 與此同時,在不銹鋼鍋中,放下醋和糖,用中慢火,把糖煮溶。熄火,完全放涼。
  4. 從雪櫃拿出青瓜,放入放涼的醋和糖混合物中。最好用玻璃器皿盛著,放入雪櫃中,醃 1至 2小時,即成。如喜歡吃辣的話,切紅辣椒拌勻。
